MY NEW DISCOVERY
BUTTERCUP SQUASH
These are the most delicious Winter Squash I have ever eaten.
Their flavor is much like ButterNut Squash...with a hint of sweet potato...:)
I will use these whenever I can get them...and will make ''Pumpkin Pies'' from them
this year...(by the way, did you know that the 'canned pumpkin' you buy is usually Hubbard Squash?...:)
This squash can be used any way you would use winter squash...and cooked any way.
I prefer the easy way....Cut in half...scoop out seeds...place in large microwavable casserole/pyrex dish with an inch of water...COVER....Microwave until well done...took mine 18 minutes for a squash half the size of a volleyball.
Cool,... enough to handle...scoop out the orange part, :)...add salt, butter and brown sugar to taste...(I used Splenda)...stir it up and reheat....you could add a bit of maple syrup too. And cooked this way you could even put it back in it's shell and serve...the green shell is even soft and edible...(FIBER)!!!
Or you could cook it the old fashioned way cut in sections and baked with butter, salt and brown sugar like my mom did for all winter squash..:)
This squash could be used for anything you would use a yam, sweet potato or squash for. Muffins, Pies, Puddings, Pumpkin Cheesecakes, Breads, Soups, and even add some to your pancake batter!!!...Delicious!
